One-pot chicken cacciatore a quick dinner

This one-pot chicken supper needs only a crisp green salad and crusty bread to complete the meal.

It's one of 80 recipes in a new cookbook that pays attention to our shortage of cooking time and our appreciation of easy cuisine. The ninth cookbook from Clodagh McKenna, an energetic Irish-born TV cook and food writer, In Minutes (Kyle/Manda, $27.99) is divided by cooking times.

Some recipes take only 10 minutes, others 20, and still others, such as this one, take 30 minutes to prepare. The quickies include maincourse salads, pasta and fish dishes. In the 20-minute group, stir-fries, burgers, tacos and hot dogs are speedy dishes.

With 30 minutes to prepare, variations on fish and chips, a delectable mac and cheese, tarts, and more fish and steak ideas are offered.

Most recipes include a “recipe swap” — a quick alternative to a recipe ingredient. U.K. measures are easy to translate, and photographs by Dora Kazmierak are simple and punchy.
